Hot And Sour Prawns 酸辣蝦碌 - "Malaysian Monday 31"



This is simply an adult version of prawns in tomato sauce (乾煎蝦碌), with the extra kick from the added hot chili sauce. I used ABC chili sauce from Indonesia since I always have a bottle in my kitchen, Siracha sauce would made a good substitute. Make sure you serve this dish with plenty of steamed rice to go with the delicious sauce. I have taken on 2 new projects so it will be a while before I am able to start visiting any of your blogs. Meanwhile I will try to post as regularly as possible.  
P.S Banana prawns are selling at less than $15/kg at both major supermarket at the moment and there is no better time to buy a large quantities and freeze them for later use. But make sure you ask for the frozen ones from the cold room though.



recipe from the tummies' kitchen
serve 2 to 4 as part of a Chinese meal
you'll need;
600 g of banana whole prawns
3 garlic cloves, finely chopped
5 cm knob of ginger, finely chopped
1 large shallot, finely chopped
1/2 a red onion, sliced
2 spring onions, cut into 4 cm lengths
1 red chili, sliced
1 yellow chili, sliced
peanut oil for cooking
corn flour solution for thickening

for the sauce;
5 tbs of tomato sauce
3 to 5 tbs of ABC chili sauce
1 tbs of sugar
2 tbs of light soy
100 ml of stock
white pepper to taste



Prepare the aromatics.



To dress the prawns - cut away the pointy end of the heads and remove the sand sacks.



Mix all the sauce ingredients in a bowl and set aside.



Pan fry prawns in batches with a little oil until golden - about 70% cooked. Remove and set aside.



Add 2 tbs of cooking oil in the same pan and saute the chopped ingredients for 1-2 minutes until fragrant. Add the sliced onions and continue to cook for a minute before adding the prepared sauce mixture. Let it simmer for a minute or two and check for seasonings.


Return prawns to the pan and cook for a minute before adding the spring onions and chillies. Mix well and thicken the sauce slightly with a little corn flour solution.



Serve immediately with plenty of steamed rice.
